Belgian Style Waffles

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In a separate medium bowl, whisk the eggs, milk, melted butter, and vanilla extract until smooth.
Cooking
  1. Pour the wet ingredients into the dry ingredients and stir until just combined; be careful not to overmix, as a few lumps are okay.
  2. Preheat your waffle iron and lightly grease it if necessary.
  3. Pour about 1/2 to 3/4 cup of batter onto the hot waffle iron, close the lid, and cook according to your waffle iron manufacturer's instructions, usually for 3-5 minutes, until golden brown and crispy.
  4. Carefully remove the cooked waffle and repeat with the remaining batter.
Serving
  1. Serve the hot Belgian waffles immediately with your favorite toppings such as syrup, fruit, or whipped cream.

Notes

For extra fluffy waffles, separate the egg yolks and whites. Beat the whites until stiff peaks form, and fold them into the batter as the last step. Do not overmix the batter; a few lumps are fine and will result in a tender waffle. Keep cooked waffles warm in a single layer on a wire rack in a 200°F (93°C) oven while you cook the rest of the batch.
