Cooking Steps
- Cook the pasta according to package directions in a large pot of salted boiling water until al dente; reserve 1/2 cup of pasta water before draining.
- While pasta cooks, heat olive oil and butter in a large skillet over medium heat, then add minced garlic and red pepper flakes, cooking until fragrant for about 1 minute.
- Add shrimp to the skillet and cook for 2-3 minutes per side until they turn pink and opaque.
- Pour in the white wine or chicken broth and lemon juice, bringing the sauce to a gentle simmer.
- Toss the drained pasta with the shrimp and sauce, adding reserved pasta water as needed to create a glossy consistency, then stir in fresh parsley, salt, and pepper.
Notes
For extra flavor, use fresh shrimp and make sure not to overcook them to keep them tender and juicy. A good quality dry white wine like Pinot Grigio or Sauvignon Blanc will enhance the sauce.
