  • 1 onion large, sliced

  • 10 flour tortillas warm

Preparation
  1. In a bowl, combine lime juice, 2 tbsp olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper to create the marinade.
  2. Add the sliced beef to the marinade, ensuring it's fully coated, then cover and refrigerate for at least 30 minutes, or up to 2 hours for enhanced flavor.
Cooking
  1. Heat 1 tbsp olive oil in a large skillet or cast-iron pan over medium-high heat.
  2. Add the sliced bell peppers and onion to the hot pan and sauté for 5-7 minutes until they are tender-crisp.
  3. Remove the vegetables from the pan and set them aside, keeping them warm.
  4. Increase the heat to high and add the marinated beef to the same pan, cooking in batches if necessary to avoid overcrowding.
  5. Sear the beef for 2-3 minutes per side until browned and cooked through, ensuring it remains tender.
  6. Return the cooked vegetables to the pan with the beef and toss everything together to combine and heat through.
