Preparation
- Whisk together flour, ginger, cinnamon, cloves, baking soda, and salt in a medium bowl and set aside.
- In a large bowl, cream together softened butter and brown sugar until light and fluffy.
- Beat in the molasses and egg until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
- Divide the dough into three equal portions and shape each into a thick disk.
- Wrap each disk in plastic wrap and refrigerate for at least 30 minutes to firm up.
Baking
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Place the chilled dough disks onto the prepared baking sheet, spacing them a few inches apart.
- Bake for 9-11 minutes, or until the edges are set and the centers are still slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Icing (Optional)
- In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
- Once the cookies are completely cool, drizzle or spread the icing over them as desired.
Notes
For extra flavor, add a pinch of black pepper or a dash of fresh orange zest to the dough. You can also press a few sugar pearls or sprinkles onto the cookies before baking for a festive touch.
