  • 1 tsp oregano
  • 0.5 tsp rosemary
  • 3 cloves garlic, minced
  • salt to taste

Asian-Inspired Pot Roast
  • 3-4 pounds beef chuck roast
  • 0.5 cup soy sauce
  • 0.25 cup hoisin sauce
  • 2 tbsp rice vinegar
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 tsp sesame oil
  • 0.5 tsp red pepper flakes optional
  • scallions, sliced for garnish

Method
 

Basic Pot Roast
  1. Season the beef roast liberally with salt and pepper.
  2. Place the seasoned roast in the slow cooker and add beef broth.
  3. Add carrots, potatoes, onion, minced garlic, thyme, and bay leaf to the slow cooker.
  4. Cook on low for 6-8 hours or on high for 3-4 hours, until the beef is fork-tender.
Mediterranean Pot Roast
  1. Season the beef roast with salt and pepper.
  2. Place the roast in the slow cooker and pour in crushed tomatoes and red wine.
  3. Add pitted Kalamata olives, chopped sun-dried tomatoes, oregano, rosemary, and minced garlic.

Asian-Inspired Pot Roast
