  • 5 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 2 tablespoons unsalted butter
  • 1 cup cooked chicken, shredded optional
  • 0.5 cup diced bell peppers optional
  • 0.25 cup diced onions optional

Method
 

Preparation
  1. Gather all your ingredients and any optional fillings you wish to include, such as cooked chicken, bell peppers, or onions.
Cooking
  1. Melt half a tablespoon of butter in a large skillet over medium heat, then place one tortilla in the skillet.
  2. Sprinkle about half a cup of mixed cheeses over one half of the tortilla, adding any desired fillings on top of the cheese.
  3. Cook for 2-3 minutes until the cheese begins to melt and the bottom of the tortilla is lightly golden, then fold the other half of the tortilla over the filling.
  4. Press gently with a spatula and cook for another 2-3 minutes on each side until golden brown and the cheese is fully melted.
  5. Remove the quesadilla from the skillet, cut into wedges, and repeat the process for the remaining tortillas, adding more butter as needed.

Notes
