Method
 

Preparation
  1. Wash and thoroughly dry the apples, then remove the stems and insert a skewer into the stem end of each apple.
  2. Prepare a baking sheet by lining it with parchment paper and lightly greasing it, or use a silicone mat.
Make the Candy Coating
  1. Combine sugar, corn syrup, and 1 cup of water in a heavy-bottomed saucepan over medium-high heat.
  2. Stir until the sugar dissolves, then stop stirring and bring the mixture to a boil.
  3. Insert a candy thermometer and cook the syrup until it reaches 300-310°F (149-154°C), the hard crack stage.
  4. Carefully remove the saucepan from the heat and stir in a few drops of red food coloring until evenly distributed.
Dip and Cool
  1. Working quickly, dip each apple into the hot candy mixture, tilting the pan and rotating the apple to ensure it is fully coated.
  2. Lift the apple, allowing excess candy to drip off, and then place it onto the prepared baking sheet.
  3. Repeat with the remaining apples and allow them to cool completely at room temperature, which will cause the candy coating to harden.

Notes

For best results, ensure your apples are very cold before dipping, as this helps the candy set faster. Work quickly when dipping, as the candy can start to harden. You can experiment with different food coloring colors for various themes.
