Preparation
- Marinate the chicken pieces with ginger-garlic paste, yogurt, biryani masala, red chili powder, turmeric powder, and salt for at least 30 minutes.
- Soak the basmati rice in water for 30 minutes and then drain it.
Cooking
- Heat oil in a large pot and sauté the sliced onions until golden brown.
- Add the chopped tomatoes and cook until they soften and the oil separates.
- Add the marinated chicken and cook for 10-15 minutes until it is partially cooked.
- In a separate pot, boil water with whole spices and salt, then add the soaked rice and cook until 70% done.
- Layer the partially cooked rice over the chicken mixture, garnish with fried onions, fresh mint, and coriander.
- Cover the pot tightly and cook on low heat for 20-25 minutes (dum cooking) until the rice and chicken are fully cooked.
Notes
For best results, use good quality basmati rice and fresh chicken. Adjust spices according to your preference. A heavy-bottomed pot is recommended for dum cooking to prevent burning.
