  • 1 kg Chicken cut into pieces
  • 500 g Basmati Rice soaked for 30 mins
  • 3 Onions sliced
  • 2 Tomatoes chopped
  • 1 cup Yogurt
Spices
  • 2 tbsp Ginger-Garlic Paste
  • 3 tbsp Biryani Masala
  • 1 tsp Red Chili Powder
  • 0.5 tsp Turmeric Powder
  • Salt to taste

  • Separate pot for rice

Method
 

Preparation
  1. Marinate the chicken pieces with ginger-garlic paste, yogurt, biryani masala, red chili powder, turmeric powder, and salt for at least 30 minutes.
  2. Soak the basmati rice in water for 30 minutes and then drain it.
Cooking
  1. Heat oil in a large pot and sauté the sliced onions until golden brown.
  2. Add the chopped tomatoes and cook until they soften and the oil separates.
  3. Add the marinated chicken and cook for 10-15 minutes until it is partially cooked.
  4. In a separate pot, boil water with whole spices and salt, then add the soaked rice and cook until 70% done.
  5. Layer the partially cooked rice over the chicken mixture, garnish with fried onions, fresh mint, and coriander.
  6. Cover the pot tightly and cook on low heat for 20-25 minutes (dum cooking) until the rice and chicken are fully cooked.

Notes

For best results, use good quality basmati rice and fresh chicken. Adjust spices according to your preference. A heavy-bottomed pot is recommended for dum cooking to prevent burning.
