Make the filling
- Melt butter in a large pot or Dutch oven over medium heat, then add the diced onion, carrots, and celery.
- Cook vegetables for 5-7 minutes until softened, then stir in flour and cook for 1 minute.
- Gradually whisk in chicken broth and milk, bringing the mixture to a simmer.
- Add shredded chicken, frozen peas, salt, and pepper, then stir to combine and remove from heat.
Assemble the pie
- Preheat oven to 400°F (200°C) and place one pie crust in a 9-inch pie dish.
- Pour the chicken filling into the pie crust, then top with the second pie crust.
- Crimp the edges to seal and cut a few slits in the top crust for ventilation.
- Bake for 35-40 minutes until the crust is golden brown and the filling is bubbly.
Serve
- Let the pie cool for 10-15 minutes before slicing and serving.
Notes
For extra flavor, consider adding a pinch of dried thyme or rosemary to the filling. If you don't have cooked chicken on hand, you can boil or roast chicken breasts specifically for this recipe. Ensure the pie cools sufficiently before serving to allow the filling to set properly.
