Ingredients
  

For the Crust
  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, very cold and cut into cubes
  • 0.5 cup ice water
  • 1 tsp salt
For the Filling
  • 6 medium apples, peeled, cored, and sliced
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar
  • 2 tbsp all-purpose flour
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
Egg Wash
  • 1 egg
  • 1 tbsp water

Method
 

Prepare the Crust
  1. In a large bowl, combine flour and salt, then cut in the cold butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing until the dough comes together; divide into two discs and chill for 30 minutes.
Make the Filling
  1. In a separate bowl, combine sliced apples with both sugars, flour, cinnamon, nutmeg, and lemon juice.
  2. Ensure the apples are evenly coated with the spice mixture.
Assemble the Pie
  1. Preheat oven to 400°F (200°C) and roll out one dough disc to fit a pie plate, then pour in the apple filling.
  2. Roll out the second dough disc, place it over the filling, trim, crimp the edges, and cut vents in the top.
  3. Whisk the egg and water, then brush the mixture over the top crust.
Bake the Pie
  1. Bake for 15 minutes at 400°F (200°C), then reduce heat to 375°F (190°C) and continue baking for 45-50 minutes, or until golden brown.
  2. Allow the pie to cool completely on a wire rack before serving to allow the filling to set.

Notes

For best results, use a variety of apples like Granny Smith and Honeycrisp for a balanced flavor and texture. If the crust starts browning too quickly, you can cover the edges with aluminum foil.
