Prepare the Crust
- In a large bowl, combine flour and salt, then cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until the dough comes together; divide into two discs and chill for 30 minutes.
Make the Filling
- In a separate bowl, combine sliced apples with both sugars, flour, cinnamon, nutmeg, and lemon juice.
- Ensure the apples are evenly coated with the spice mixture.
Assemble the Pie
- Preheat oven to 400°F (200°C) and roll out one dough disc to fit a pie plate, then pour in the apple filling.
- Roll out the second dough disc, place it over the filling, trim, crimp the edges, and cut vents in the top.
- Whisk the egg and water, then brush the mixture over the top crust.
Bake the Pie
- Bake for 15 minutes at 400°F (200°C), then reduce heat to 375°F (190°C) and continue baking for 45-50 minutes, or until golden brown.
- Allow the pie to cool completely on a wire rack before serving to allow the filling to set.
