Marinating the Chicken
- Combine chicken pieces with Greek yogurt, ginger-garlic paste, garam masala, turmeric powder, chili powder, and salt in a bowl.
- Mix well to coat all chicken pieces thoroughly. Marinate for at least 30 minutes, or preferably for a few hours in the refrigerator.
Cooking the Chicken and Sauce
- Melt butter in a large pan or Dutch oven over medium heat. Add chopped onions and sauté until translucent.
- Stir in ginger-garlic paste and cook for another minute until fragrant.
- Add the marinated chicken to the pan and cook until it is browned on all sides and mostly cooked through.
- Add diced tomatoes, soaked cashews, garam masala, and sugar. Bring the mixture to a simmer and cook for 10-15 minutes, allowing the flavors to meld.
- Carefully transfer the chicken and sauce mixture to a blender or use an immersion blender to blend until smooth. Return the blended sauce to the pan.
Finishing the Dish
- Stir in the heavy cream and simmer for 5 minutes, ensuring the sauce is heated through but not boiled.
- Garnish with fresh cilantro before serving. Serve hot with rice or naan.
Notes
For extra flavor, you can grill or broil the marinated chicken before adding it to the sauce. Adjust spice levels to your preference by increasing or decreasing the chili powder.
