Prepping Ingredients
- Prepare all ingredients by mincing the garlic, grating the ginger, chopping water chestnuts, and slicing scallions.
- In a small bowl, whisk together all sauce ingredients until well combined and set aside.
Cooking the Chicken
- Heat sesame oil in a large skillet or wok over medium-high heat, then add ground chicken and cook, breaking it apart, until no longer pink.
- Drain any excess fat from the skillet, then stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.
Finishing the Filling
- Add the chopped water chestnuts and half of the sliced scallions to the skillet, stirring to combine.
- Pour the prepared sauce over the chicken mixture and cook for 2-3 minutes, stirring constantly, until the sauce thickens and coats the chicken.
- Remove the skillet from heat and taste, adjusting seasonings if needed.
Assembling and Serving
- Arrange butter lettuce leaves on a platter along with the chicken mixture, shredded carrots, chopped peanuts, and fresh cilantro.
- To eat, spoon a portion of the chicken mixture into a lettuce cup, then top with desired garnishes and fold or roll to enjoy.
Notes
For extra spice, add more chili garlic sauce or a pinch of red pepper flakes to the sauce. These wraps are great for meal prep; simply store the chicken filling and lettuce separately and assemble when ready to eat.
