Ingredients
  

For the Chicken
  • 1 lb ground chicken
  • 1 tbsp sesame oil
  • 2 cloves minced garlic
  • 1 tbsp grated fresh ginger
  • 8 oz can water chestnuts drained and finely chopped
  • 3 scallions thinly sliced
For the Sauce
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp chili garlic sauce
  • 1 tsp cornstarch
For Serving
  • 12 large butter lettuce leaves
  • 1/2 cup shredded carrots
  • 1/4 cup chopped roasted peanuts
  • 1/4 cup fresh cilantro chopped

Method
 

Prepping Ingredients
  1. Prepare all ingredients by mincing the garlic, grating the ginger, chopping water chestnuts, and slicing scallions.
  2. In a small bowl, whisk together all sauce ingredients until well combined and set aside.
Cooking the Chicken
  1. Heat sesame oil in a large skillet or wok over medium-high heat, then add ground chicken and cook, breaking it apart, until no longer pink.
  2. Drain any excess fat from the skillet, then stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.
Finishing the Filling
  1. Add the chopped water chestnuts and half of the sliced scallions to the skillet, stirring to combine.
  2. Pour the prepared sauce over the chicken mixture and cook for 2-3 minutes, stirring constantly, until the sauce thickens and coats the chicken.
  3. Remove the skillet from heat and taste, adjusting seasonings if needed.
Assembling and Serving
  1. Arrange butter lettuce leaves on a platter along with the chicken mixture, shredded carrots, chopped peanuts, and fresh cilantro.
  2. To eat, spoon a portion of the chicken mixture into a lettuce cup, then top with desired garnishes and fold or roll to enjoy.

Notes

For extra spice, add more chili garlic sauce or a pinch of red pepper flakes to the sauce. These wraps are great for meal prep; simply store the chicken filling and lettuce separately and assemble when ready to eat.
