  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • 8 ounces mushrooms, sliced
  • ½ cup Marsala wine
  • ½ cup chicken broth
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley, chopped

Preparation
  1. Season chicken breasts: Pound chicken breasts to an even thickness, then dredge them in a mixture of flour, salt, and pepper.
  2. Sear chicken: Heat olive oil in a large skillet over medium-high heat and sear the chicken for 3-5 minutes per side until golden brown and cooked through; remove and set aside.
  3. Sauté mushrooms: In the same skillet, add sliced mushrooms and sauté until tender, approximately 5-7 minutes.
  4. Deglaze and simmer sauce: Pour in Marsala wine and chicken broth, scraping up any browned bits from the bottom of the pan; bring to a simmer and cook until slightly reduced.
  5. Finish and serve: Stir in butter and return the cooked chicken to the skillet, coating it with the sauce; garnish with fresh parsley and serve immediately.

Notes

Serve this Chicken Marsala with your favorite pasta, rice, or mashed potatoes to soak up all the delicious sauce. For a richer flavor, use a good quality dry Marsala wine. If you don't have Marsala wine, dry sherry or a dry white wine can be used as a substitute, though the flavor will be slightly different.
