Ingredients

Main Ingredients
  • 4 large boneless, skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup Panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup fresh basil (for garnish)
For Frying
  • 2 cups vegetable oil

Equipment

  • Oven
  • Baking sheet
  • Parchment paper
  • Shallow dishes
  • Large skillet
  • Tongs

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  2. Slice each chicken breast horizontally to create two thinner cutlets, then season both sides with salt and pepper.
  3. Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for a mix of Panko, Parmesan, garlic powder, and oregano.
Cooking the Chicken
  1. Dredge each chicken cutlet in flour, then dip in egg, and finally coat thoroughly with the Panko mixture.
  2. Heat vegetable oil in a large skillet over medium-high heat and pan-fry each breaded cutlet for 3-4 minutes per side until golden brown.
  3. Transfer the browned chicken cutlets to the prepared baking sheet.
Baking and Finishing
  1. Spoon marinara sauce over each chicken cutlet, then generously sprinkle shredded mozzarella cheese on top.
  2. Bake for 10-12 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
  3. Serve immediately, garnished with fresh basil.

Notes

For extra crispiness, you can lightly toast the Panko breadcrumbs in a dry pan before breading the chicken. Serve with your favorite pasta or a simple side salad for a complete meal.
