Ingredients
  

Salad
  • 2 medium chicken breasts cooked and diced
  • 6 slices bacon cooked and crumbled
  • 4 hard-boiled eggs halved or quartered
  • 1 large avocado diced
  • 1 head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup blue cheese crumbled
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

Prepare the ingredients
  1. Cook the chicken breasts until done, then dice them. Cook the bacon until crispy and crumble it.
  2. Hard boil the eggs, then peel and cut them in halves or quarters. Dice the avocado and chop the romaine lettuce.
  3. Halve the cherry tomatoes and crumble the blue cheese.
Make the dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
Assemble the salad
  1. Arrange the chopped romaine lettuce on a large platter or in a salad bowl.
  2. Neatly arrange the diced chicken, crumbled bacon, hard-boiled eggs, diced avocado, halved cherry tomatoes, and crumbled blue cheese in rows on top of the lettuce.
  3. Drizzle the dressing over the salad just before serving, or serve it on the side.

Notes

For an extra touch, you can grill the chicken breasts instead of just cooking them. If you prefer a different cheese, feta or goat cheese can be a good substitute for blue cheese.
