Ingredients

Pancake Batter
  • 1 cup cottage cheese
  • 2 eggs
  • 0.5 cup flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 0.5 tsp vanilla extract
  • 0.25 cup milk (or as needed)
For Frying
  • 1 tbsp butter or oil

Equipment

  • large bowl
  • whisk
  • non-stick pan
  • ladle or 1/4 cup measuring cup

Method

Preparation
  1. In a large bowl, whisk together the cottage cheese and eggs until well combined and the cottage cheese is mostly smooth.
  2. Add the flour, sugar, baking powder, and vanilla extract to the mixture, stirring until just combined and a few lumps remain.
  3. Gradually add milk until you reach a pourable yet thick pancake batter consistency.
Cooking
  1. Heat a non-stick pan or griddle over medium heat and melt a small amount of butter or add oil.
  2. Pour about 1/4 cup of batter per pancake onto the hot surface, leaving space between them.
  3. Cook for 2-3 minutes per side, or until golden brown and cooked through, then flip and cook the other side.
  4. Repeat with the remaining batter, adding more butter or oil as needed.
Serving
  1. Serve the cottage cheese pancakes immediately with your favorite toppings like fresh fruit, syrup, or whipped cream.

Notes

Don't overmix the batter; a few lumps are fine and contribute to the pancake's texture. Adjust milk quantity to achieve desired batter consistency. For extra flavor, add a pinch of cinnamon or nutmeg to the batter. These pancakes can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the microwave or toaster oven.
