Preparation
- Preheat your oven to 325°F (160°C) and grease and flour a 9x5 inch loaf pan.
Mixing Dry Ingredients
- In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt. Make sure all dry ingredients are well combined.
Combining Wet Ingredients
- In a separate bowl, beat the eggs, then stir in the vegetable oil and vanilla extract. Add the shredded zucchini and mix well.
Combining Wet and Dry
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix the batter.
Adding Optional Ingredients
- If desired, gently fold in any chopped nuts or chocolate chips at this stage.
Baking
- Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
Cooling
- Allow the zucchini bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For extra moisture and flavor, you can add a hint of orange zest to the batter. Zucchini bread freezes well for up to 3 months; wrap individual slices in plastic wrap and then aluminum foil.
