  • 1 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • ½ teaspoon Salt
Wet Ingredients
  • 2 large Eggs
  • ½ cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 2 cups Shredded zucchini
Optional Add-ins
  • ½ cup Chopped nuts (walnuts or pecans)
  • ½ cup Chocolate chips

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and grease and flour a 9x5 inch loaf pan.
Mixing Dry Ingredients
  1. In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt. Make sure all dry ingredients are well combined.
Combining Wet Ingredients
  1. In a separate bowl, beat the eggs, then stir in the vegetable oil and vanilla extract. Add the shredded zucchini and mix well.
Combining Wet and Dry
  1. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix the batter.
Adding Optional Ingredients
  1. If desired, gently fold in any chopped nuts or chocolate chips at this stage.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
Cooling
  1. Allow the zucchini bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For extra moisture and flavor, you can add a hint of orange zest to the batter. Zucchini bread freezes well for up to 3 months; wrap individual slices in plastic wrap and then aluminum foil.
