Biscuits
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder

  • 6 tablespoons cold butter, cubed
  • 3/4 cup buttermilk
Gravy
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

For the Biscuits
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Gradually add the buttermilk, mixing until a shaggy dough forms.
  5. Turn the dough out onto a lightly floured surface and gently pat it to about 1-inch thickness.
  6. Cut out biscuits using a 2-inch round cutter and place them on the prepared baking sheet.
  7. Bake for 12-15 minutes, or until golden brown on top and cooked through.
For the Gravy
  1. In a large skillet, cook the breakfast sausage over medium heat, breaking it up with a spoon until browned.
  2. Drain off most of the grease, leaving about 2 tablespoons in the skillet.
  3. Sprinkle the flour over the cooked sausage and cook for 1 minute, stirring constantly.
  4. Gradually whisk in the milk until smooth, then bring the mixture to a simmer, stirring frequently until thickened.
  5. Season the gravy with salt and black pepper to taste.
Assembly
  1. Split warm biscuits in half and spoon a generous amount of gravy over each half.

Notes

For extra flavor, you can add a pinch of cayenne pepper to the gravy. Leftover biscuits and gravy can be stored in an airtight container in the refrigerator for up to 2 days.
