  • 4 cups Watermelon cubed
  • 1 Cucumber peeled, deseeded, chopped
  • 0.5 Red Bell Pepper stemmed, deseeded, chopped
  • 0.25 Red Onion small, chopped
  • 2 tbsp Lime Juice
  • 0.25 cup Fresh Mint packed
  • 1 tbsp Olive Oil
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Method
 

Preparation
  1. Roughly chop the watermelon, cucumber, half red bell pepper, and quarter red onion, then place them into a blender.
  2. Add the lime juice, fresh mint, olive oil, salt, and black pepper to the blender.
  3. Blend all ingredients until the mixture is smooth and well combined.
  4. Taste and adjust seasonings as desired.
  5. Pour the gazpacho into a large bowl or container, cover, and chill in the refrigerator for at least 1 hour before serving.

Notes

For best flavor, ensure the gazpacho is thoroughly chilled before serving. Garnish with additional fresh mint leaves, a drizzle of olive oil, or small diced cucumber/watermelon pieces if desired.
