  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Preparation
  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate medium bowl, whisk together the egg yolks, milk, oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  4. In a clean bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the batter until fully incorporated.
Cooking
  1. Preheat your Belgian waffle iron according to the manufacturer's instructions.
  2. Lightly grease the waffle iron plates, if necessary.
  3. Pour about 1/2 to 3/4 cup of batter onto the hot waffle iron, or as directed by your waffle iron's instructions.
  4. Close the lid and cook for 3-5 minutes, or until the waffle is golden brown and crisp.
Serving
  1. Carefully remove the cooked waffle from the iron and serve immediately.
  2. Repeat with the remaining batter, ensuring the waffle iron stays hot.
