Preparation
- Cook the pasta according to package directions in salted water until al dente.
- Drain the pasta and set it aside, reserving 1/2 cup of the pasta water.
Sauce
- Heat olive oil in a large skillet over medium heat, then add minced garlic and cook for 1 minute until fragrant.
- Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes.
- Pour in the chicken broth and heavy cream, bring to a simmer, and cook for 5 minutes until the sauce slightly thickens.
- Reduce heat to low, stir in the grated Parmesan cheese until melted and smooth, then add the fresh spinach and cook until wilted.
- Season the sauce with salt and black pepper to taste.
Combine and Serve
- Add the cooked pasta to the skillet with the sauce and toss to coat evenly.
- If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Garnish with fresh basil before serving.
Notes
For a spicier kick, add a pinch of red pepper flakes to the sauce. You can also add grilled chicken or shrimp for a more substantial meal.
