Preparation
- Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- Warm tortillas briefly in a microwave or oven to make them pliable.
Assembly
- Spread a thin layer of enchilada sauce on the bottom of the prepared baking dish.
- Dip each tortilla in enchilada sauce, then fill with shredded chicken and a sprinkle of cheese.
- Roll up each tortilla tightly and place seam-side down in the baking dish.
Baking
- Pour remaining enchilada sauce over the rolled enchiladas and top with the remaining shredded cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.
- Let stand for a few minutes before serving, then garnish with sour cream if desired.
Notes
For an extra kick, add some diced green chilies to the chicken filling. You can also customize with your favorite toppings like salsa, guacamole, or chopped cilantro.
