Preparation
- Preheat your oven to 400°F (200°C) and lightly grease an 8x8 inch baking pan. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate medium bowl, combine the milk, egg, and vegetable oil. Pour the wet ingredients into the dry ingredients and stir until just combined; be careful not to overmix, as this can lead to tough cornbread.
Baking
- Pour the batter into the prepared baking pan and spread it evenly. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Serving
- Remove the cornbread from the oven and let it cool in the pan for a few minutes before slicing and serving. Enjoy your freshly baked cornbread!
Notes
For extra flavor, you can add 1/2 cup of shredded cheddar cheese or a few tablespoons of finely chopped jalapeños to the batter.
