Ingredients
  

Dough
  • 2.25 teaspoons active dry yeast
  • 1 cup warm milk (105-115°F / 40-46°C)
  • 0.25 cup granulated sugar
  • 1 large egg
  • 0.25 cup unsalted butter, melted
  • 3 cups all-purpose flour
  • 0.5 teaspoon salt

Method
 

Preparation
  1. Activate the yeast by combining warm milk, yeast, and a pinch of sugar; let it sit for 5-10 minutes until foamy.
  2. In a large bowl, whisk together the activated yeast mixture, remaining sugar, egg, and melted butter.
  3. Gradually add the flour and salt, mixing until a shaggy dough forms, then turn it out onto a lightly floured surface.
  4. Knead the dough for 8-10 minutes until it becomes smooth and elastic, then place it in a greased bowl, turning once to coat.
  5. Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Once risen, gently punch down the dough to release air, then proceed with shaping and baking your cinnamon rolls.

Notes

For an extra boost to rising, place the dough in a slightly warmed oven (turned off!) with a pan of hot water on the bottom rack. The steam creates a perfect environment for yeast activation and dough growth.
