Preparation
- Activate the yeast by combining warm milk, yeast, and a pinch of sugar; let it sit for 5-10 minutes until foamy.
- In a large bowl, whisk together the activated yeast mixture, remaining sugar, egg, and melted butter.
- Gradually add the flour and salt, mixing until a shaggy dough forms, then turn it out onto a lightly floured surface.
- Knead the dough for 8-10 minutes until it becomes smooth and elastic, then place it in a greased bowl, turning once to coat.
- Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
- Once risen, gently punch down the dough to release air, then proceed with shaping and baking your cinnamon rolls.
Notes
For an extra boost to rising, place the dough in a slightly warmed oven (turned off!) with a pan of hot water on the bottom rack. The steam creates a perfect environment for yeast activation and dough growth.
