Ingredients
  

For the Chicken
  • 2 large boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 2 chopped celery stalks
  • 2 chopped carrots
  • 1 chopped onion
  • 1 tsp salt
  • 0.5 tsp black pepper
For the Dumplings
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.75 cup milk
  • 0.25 cup butter melted
Optional Garnish
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh thyme chopped
Thickener
  • cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water)

Method
 

Cook the Chicken
  1. In a large pot or Dutch oven, combine chicken breasts, chicken broth, celery, carrots, onion, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
Prepare the Dumplings
  1. While the chicken cooks, whisk together flour, baking powder, and salt in a medium bowl. In a separate bowl, whisk together milk and melted butter. Add the wet ingredients to the dry ingredients and mix until just combined.
Shred Chicken and Thicken Broth
  1. Remove chicken from the pot and shred it into bite-sized pieces. If desired, add the cornstarch slurry to the simmering broth to thicken it slightly. Return shredded chicken to the pot.
Cook the Dumplings
  1. Drop spoonfuls of dumpling dough into the simmering broth. Cover and cook for 10-15 minutes, or until dumplings are puffed and cooked through.
Serve
  1. Ladle the chicken and dumplings into bowls and garnish with fresh parsley and thyme, if using. Serve hot.

Notes

For extra flavor, you can sauté the vegetables in a little butter before adding the broth. You can also use pre-cooked rotisserie chicken to save time. Adjust seasoning to your taste, and consider adding a pinch of dried thyme or bay leaf to the broth for more depth of flavor.
