  • 0.5 cup chicken broth
  • 0.5 cup dry white wine Optional
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Preparation
  1. Season chicken pieces generously with salt and pepper.
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  3. Brown chicken pieces on all sides, then remove and set aside.
  4. Add chopped onion and bell peppers to the pot and sauté until softened, about 5-7 minutes.
  5. Stir in sliced mushrooms and minced garlic, cooking for another 2-3 minutes until fragrant.
  6. Pour in dry white wine, if using, and deglaze the pan by scraping up any browned bits from the bottom.
  7. Add crushed tomatoes, chicken broth, oregano, basil, salt, and pepper; stir to combine.
  8. Return chicken pieces to the pot, nestling them into the sauce.
  9. Bring the sauce to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until chicken is tender and cooked through.
  10. Taste and adjust seasoning as needed before serving hot, possibly with pasta or crusty bread.

Notes

For an extra layer of flavor, you can marinate the chicken in a little olive oil, garlic, and herbs for at least 30 minutes before browning. This recipe is also great for meal prepping; leftovers can be stored in the refrigerator for up to 3-4 days and reheated. Pair with your favorite pasta, rice, or a side of crusty bread to soak up the delicious sauce.
