- In a medium bowl, combine the soy sauce, honey, grated ginger, minced garlic, sesame oil, and black pepper to create the marinade.
- Add the chicken pieces to the marinade, ensuring they are fully coated, then cover and refrigerate for at least 30 minutes or up to 4 hours.
- Preheat your grill to medium-high heat and thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto the skewers, alternating ingredients.
- Lightly oil the grill grates to prevent sticking, then place the kabobs on the preheated grill.
- Grill the kabobs for 10-15 minutes, turning them occasionally, until the chicken is cooked through and the vegetables are tender-crisp.
Notes
For extra flavor, baste the kabobs with the remaining marinade during the last few minutes of grilling. If you prefer a little heat, add a pinch of red pepper flakes to the marinade. Serve with rice or a fresh salad for a complete meal.
