  • 2 boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 bell peppers any color, cut into 1-inch pieces
  • 1 red onion cut into 1-inch pieces
  • 1 cup cherry tomatoes
  • 1 cup soy sauce
  • 0.5 cup honey
  • 2 teaspoons ginger grated
  • 2 cloves garlic minced
  • 1 teaspoon sesame oil
  • 0.5 teaspoon black pepper
  • 12 wooden skewers soaked in water for 30 minutes if using wooden skewers

Method
 

Preparation
  1. In a medium bowl, combine the soy sauce, honey, grated ginger, minced garlic, sesame oil, and black pepper to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring they are fully coated, then cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat your grill to medium-high heat and thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto the skewers, alternating ingredients.
  4. Lightly oil the grill grates to prevent sticking, then place the kabobs on the preheated grill.
  5. Grill the kabobs for 10-15 minutes, turning them occasionally, until the chicken is cooked through and the vegetables are tender-crisp.

Notes

For extra flavor, baste the kabobs with the remaining marinade during the last few minutes of grilling. If you prefer a little heat, add a pinch of red pepper flakes to the marinade. Serve with rice or a fresh salad for a complete meal.
