Cooking Instructions
- Cook pasta according to package directions, then drain and set aside, reserving 1/2 cup of pasta water.
- Season chicken with salt and pepper, then cook in olive oil until browned and cooked through; remove from pan and slice.
- Sauté onion and garlic in the same pan until fragrant.
- Stir in sun-dried tomatoes, heavy cream, and Parmesan cheese, bringing the mixture to a simmer.
- Add spinach and cook until wilted, then return the sliced chicken to the pan.
- Finally, add the cooked pasta, tossing to coat; if needed, add some reserved pasta water to achieve desired consistency.
Notes
For extra flavor, add a pinch of red pepper flakes to the sauce. You can also substitute chicken with shrimp or leave it vegetarian.
