Ingredients
  

Main Ingredients
  • 300 g pasta
  • 2 medium chicken breast
  • 250 ml heavy cream
  • 1/2 cup sun-dried tomatoes
  • 2 cups spinach
  • 1/4 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 1 tbsp olive oil
  • to salt taste
  • to black pepper taste

Method
 

Cooking Instructions
  1. Cook pasta according to package directions, then drain and set aside, reserving 1/2 cup of pasta water.
  2. Season chicken with salt and pepper, then cook in olive oil until browned and cooked through; remove from pan and slice.
  3. Sauté onion and garlic in the same pan until fragrant.
  4. Stir in sun-dried tomatoes, heavy cream, and Parmesan cheese, bringing the mixture to a simmer.
  5. Add spinach and cook until wilted, then return the sliced chicken to the pan.
  6. Finally, add the cooked pasta, tossing to coat; if needed, add some reserved pasta water to achieve desired consistency.

Notes

For extra flavor, add a pinch of red pepper flakes to the sauce. You can also substitute chicken with shrimp or leave it vegetarian.
