Falafel (Homemade)

This recipe provides a simple three-step method to create delicious homemade falafel that are crispy on the outside and tender on the inside, perfect for a Mediterranean-inspired meal or snack.

Ingredients

  • 1 cup dried chickpeas
  • 1/2 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1/2 medium onion
  • 2 garlic cloves
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups vegetable oil for frying

Method
 

Preparation
  1. Soak dried chickpeas in water for at least 12 hours or overnight, then drain and rinse them thoroughly.
  2. Combine the soaked chickpeas, parsley, cilantro, onion, garlic, flour, baking powder, and spices in a food processor.
  3. Process the mixture until it forms a coarse meal, avoiding over-processing to maintain some texture.
Forming and Frying
  1. Scoop spoonfuls of the falafel mixture and gently shape them into small patties or balls.
  2. Heat vegetable oil in a deep pan or pot to about 350-375°F (175-190°C), ensuring enough oil for deep frying.
  3. Carefully place the falafel into the hot oil, frying in batches to avoid overcrowding the pan, and cook for 3-5 minutes per side until golden brown and crispy.
Serving
  1. Remove the cooked falafel with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  2. Serve the falafel warm in pita bread with fresh vegetables, tahini sauce, or as part of a mezze platter.

Notes

For best results, make sure the chickpeas are completely dry after soaking and draining. You can also bake the falafel at 375°F (190°C) for 20-25 minutes for a healthier alternative, flipping halfway through.
