Preparation
- Roughly chop the tomatoes, cucumber, bell pepper, red onion, and garlic, then combine all these ingredients in a large bowl with the stale bread, olive oil, red wine vinegar, cold water, salt, and pepper.
- Allow the mixture to marinate in the refrigerator for at least 30 minutes, or preferably for a few hours, to let the flavors meld.
- Transfer the marinated vegetable mixture to a blender and process until completely smooth, then strain the gazpacho through a fine-mesh sieve into a clean bowl to remove any solids.
Notes
For an even smoother gazpacho, you can peel the tomatoes before blending. Serve chilled with a drizzle of olive oil and croutons!
