  • 4 cups fresh blackberries

  • 0.5 cup granulated sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, cold and cubed
  • 0.5 cup milk

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease an 8x8 inch baking dish.
  2. In a large bowl, combine the blackberries, sugar, flour, and lemon juice for the filling. Toss gently to coat them and then pour the mixture into the prepared baking dish.
Make the Topping
  1. In a separate bowl, whisk together the flour, sugar, baking powder, and salt for the topping.
  2. Cut in the cold, cubed butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs, then stir in the milk until just combined.
  3. Drop spoonfuls of the topping mixture over the blackberry filling.
Bake and Serve
  1. Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly. Let the cobbler cool slightly before serving.
  2. Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the blackberry filling. If using frozen blackberries, do not thaw them beforehand; simply increase the baking time by 5-10 minutes.
