Cooking Steps
- Heat olive oil in a large pot and brown pork cubes on all sides; remove and set aside.
- Sauté onions for 5 minutes, then stir in garlic, cumin, oregano, smoked paprika, and cayenne pepper for 1 minute until fragrant.
- Return pork to the pot, add chicken broth, diced tomatoes, and green chilies; bring to a boil, then simmer covered for 2-3 hours until pork is tender.
- Stir in hominy and simmer for 30 minutes to meld the flavors.
- Ladle hot pozole into bowls and serve with desired toppings.
Notes
For richer flavor, roast the pork shoulder before browning. Adjust cayenne pepper to your spice preference. Pozole is excellent when made ahead; flavors deepen overnight.
