  • 2 Salmon fillets
  • 1 head Romaine lettuce
  • 1/4 cup Parmesan cheese
  • 1 cup Croutons
  • 2 tbsp Olive oil
  • 1/2 Lemon
Caesar Dressing
  • 1/2 cup Mayonnaise
  • 1 tsp Dijon mustard
  • 1 clove Garlic
  • 1 tsp Worcestershire sauce
  • 2 tbsp Parmesan cheese (grated)
  • 1 tbsp Lemon juice
  • 1/4 tsp Black pepper

Method
 

Prepare the Salmon
  1. Season the salmon fillets with salt and pepper, then drizzle with olive oil. Bake in a preheated oven at 400°F (200°C) for 12-15 minutes, or until cooked through.
  2. Alternatively, pan-sear the salmon in a hot skillet with a little olive oil for 3-5 minutes per side until golden and cooked.
Prepare the Caesar Dressing
  1. In a bowl, whisk together mayonnaise, Dijon mustard, minced garlic, Worcestershire sauce, grated Parmesan cheese, and lemon juice. Season with black pepper to taste.
Prepare the Salad Greens
  1. Wash and chop the romaine lettuce into bite-sized pieces. Place them in a large salad bowl.
Combine and Serve
  1. Once the salmon is cooked, let it cool slightly and then flake it into chunks. Add the salmon, croutons, and remaining Parmesan cheese to the salad bowl with the lettuce.
  2. Drizzle the Caesar dressing over the salad and toss gently to combine. Serve immediately.

Notes

For an extra tang, add a touch more lemon juice to the dressing. You can also toast your own croutons for a fresher crunch.
