Preparation
- Cook the wild rice according to package directions; set aside.
- Dice the chicken breast into 1-inch pieces and season with salt and pepper.
Cooking the Soup
- In a large pot, melt butter over medium heat, then add chopped onion, carrots, and celery; cook until softened, about 5-7 minutes.
- Stir in flour and cook for 1 minute, then gradually whisk in chicken broth to prevent lumps.
- Bring the mixture to a simmer, then add the diced chicken and cook for 10-12 minutes, or until the chicken is cooked through.
- Stir in the cooked wild rice and heavy cream; heat through for 2-3 minutes, but do not boil.
- Taste and adjust seasonings as needed, then serve hot.
Notes
For extra flavor, you can add a bay leaf to the soup while it simmers and remove it before serving. A sprinkle of fresh parsley or thyme as a garnish adds a nice touch.
