Preparation
- Slice the eggplants into 1/4-inch thick rounds and sprinkle with salt, then let them sit for 30 minutes to draw out moisture.
- Pat the eggplant slices dry with paper towels and set up a breading station with flour, beaten eggs, and bread crumbs in separate shallow dishes.
Cooking
- Dip each eggplant slice in flour, then egg, then bread crumbs, ensuring full coating.
- Heat olive oil in a large skillet over medium-high heat and fry the breaded eggplant slices for 2-3 minutes per side until golden brown and crispy, then drain on paper towels.
Assembly and Baking
- Preheat oven to 375°F (190°C), spread a thin layer of marinara sauce on the bottom of a baking dish, and arrange a single layer of fried eggplant slices over it.
- Top the eggplant with marinara sauce, a sprinkle of Parmesan cheese, and a layer of mozzarella cheese.
- Repeat the layers until all eggplant and cheese are used, finishing with a generous layer of mozzarella and Parmesan cheese on top.
- Bake for 25-30 minutes, or until the top is golden brown and bubbly, then let it cool slightly before serving.
