Ingredients

Main Ingredients
  • 1 large russet potato
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Toppings
  • 2 tbsp sour cream
  • 0.25 cup shredded cheddar cheese
  • 1 tbsp chopped chives
  • 2 tbsp bacon bits

Equipment

  • Oven
  • Fork

Method

Preparation
  1. Preheat your oven to 400°F (200°C). Wash the potato thoroughly and pat it dry.
  2. Prick the potato several times with a fork, then rub it with olive oil and season with salt and pepper.
Baking
  1. Place the seasoned potato directly on the oven rack and bake for 50-70 minutes, or until it is tender when squeezed.
  2. Carefully remove the potato from the oven and let it cool slightly.
Assembly
  1. Slice the potato lengthwise down the middle, being careful not to cut all the way through, and fluff the inside with a fork.
  2. Top with sour cream, shredded cheddar cheese, chopped chives, and bacon bits, then serve immediately.

Notes

For extra crispy skin, try baking the potato directly on the oven rack rather than on a baking sheet. You can also customize your toppings with other favorites like salsa, chili, or steamed vegetables.
