  • 200 g pasta
  • 1 cup cherry tomatoes halved
  • 0.5 cucumber diced
  • 0.5 bell pepper diced (any color)
  • 50 g cheddar cheese cubed
Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Method
 

Preparation
  1. Cook the pasta according to package directions until al dente, then drain and rinse with cold water to cool.
  2. While the pasta cooks, prepare the dressing by whisking together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper in a small bowl.
  3. In a large bowl, combine the cooled pasta with halved cherry tomatoes, diced cucumber, diced bell pepper, and cubed cheddar cheese.
  4. Pour the prepared dressing over the pasta and vegetables, then toss gently to ensure everything is evenly coated.
Serving
  1. Divide the pasta salad into individual lunchbox containers and refrigerate until ready to serve.
