Preparation
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Beat in peanut butter, eggs, and vanilla extract until all ingredients are well combined.
- In a separate bowl, whisk together the dry ingredients: flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined without overmixing.
- Roll the dough into 1-inch balls, place them on the prepared baking sheets, and flatten each with a fork to create a crosshatch pattern.
- Bake for 10-12 minutes until the edges are golden brown, then let cool on the baking sheets briefly before transferring to a wire rack.
Notes
For extra flavor, sprinkle a pinch of flaky sea salt on top of the cookies before baking.
