Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Beat in peanut butter, eggs, and vanilla extract until all ingredients are well combined.
  4. In a separate bowl, whisk together the dry ingredients: flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined without overmixing.
  6. Roll the dough into 1-inch balls, place them on the prepared baking sheets, and flatten each with a fork to create a crosshatch pattern.
  7. Bake for 10-12 minutes until the edges are golden brown, then let cool on the baking sheets briefly before transferring to a wire rack.

Notes

For extra flavor, sprinkle a pinch of flaky sea salt on top of the cookies before baking.
