Ingredients
  

Dry Ingredients
  • 1 ¾ cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
Wet Ingredients
  • ½ cup Unsalted butter softened
  • ½ cup Granulated sugar
  • ½ cup Packed light brown sugar
  • 1 cup Creamy peanut butter
  • 1 Large egg
  • 1 teaspoon Vanilla extract

  • Electric mixer (handheld or stand)
  • Measuring cups and spoons
  • Baking sheets
  • Parchment paper
  • Spatula

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Mixing
  1. Whisk together flour, baking soda, and salt in a small bowl.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the creamy peanut butter, then the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
Baking
  1. Roll dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
  2. Use a fork to flatten each cookie dough ball in a crisscross pattern.
  3. Bake for 10-12 minutes, or until the edges are lightly golden.
  4. Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra peanut butter flavor, you can add ½ cup of chopped roasted peanuts to the dough. Do not overbake to keep the cookies soft and chewy.
