  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 yellow onion, chopped
  • 2 cups carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cups potatoes, peeled and cubed
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 14.5 oz can diced tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 bay leaves
  • salt to taste
  • black pepper to taste

Method
 

Cooking Instructions
  1. Pat the beef dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  3. Sear the beef in batches until browned on all sides, then remove and set aside.
  4. Add the chopped onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
  5. Stir in the minced garlic and cook for another minute until fragrant.
  6. Return the seared beef to the pot, then add the beef broth, diced tomatoes, tomato paste, Worcestershire sauce, dried thyme, and bay leaves.
  7. Bring the stew to a simmer, then reduce heat to low, cover, and cook for 1.5 to 2 hours, or until the beef is tender.
  8. Stir in the cubed potatoes and continue to cook for 20-30 minutes, or until the potatoes are tender.
  9. Remove the bay leaves, taste, and adjust seasoning with salt and pepper as needed.
  10. Serve hot, garnished with fresh parsley if desired.

Notes

For extra flavor, you can deglaze the pot with a splash of red wine after searing the beef and before adding the vegetables.
