Ingredients
  

For the Chicken:
  • 1.5 lbs chicken breast trimmed and cut into 1 inch cubes
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Bowls:
  • 3 cups cooked rice
  • 1 cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 1/2 cup Kalamata olives pitted and halved
  • 1/4 cup feta cheese crumbled
  • 2 tbsp fresh dill chopped
For the Tzatziki Sauce (Optional):
  • 1/2 cup Greek yogurt
  • 1/4 cucumber grated and squeezed dry
  • 1 garlic clove, minced
  • 1 tsp lemon juice

Method
 

Cook Chicken
  1. In a medium bowl, combine chicken breast cubes with lemon juice, olive oil, dried oregano, garlic powder, salt, and black pepper, ensuring the chicken is well coated.
  2. Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken and cook for 5-7 minutes, stirring occasionally, until it is cooked through and lightly browned.
Prepare Tzatziki (Optional)
  1. If making tzatziki, combine Greek yogurt, grated cucumber, minced garlic, and lemon juice in a small bowl; stir until smooth and set aside.
Assemble Bowls
  1. Divide the cooked rice evenly among three meal prep containers or bowls, then top each with equal portions of the cooked Greek chicken.
  2. Arrange diced cucumber, cherry tomatoes, sliced red onion, Kalamata olives, crumbled feta cheese, and fresh dill around the chicken in each bowl.
  3. If desired, include a small container of homemade tzatziki sauce with each bowl for serving.

Notes
