Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a baking sheet.
- Heat olive oil in a skillet over medium heat, then sauté the chopped mushroom stems and onion until softened, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant, then remove from heat and let cool slightly.
Base Filling
- In a large bowl, combine the sautéed mushroom mixture with breadcrumbs, Parmesan cheese, salt, and pepper, mixing well.
- Divide this base mixture into three equal portions.
Spinach & Feta Filling
- To one portion of the base mixture, add chopped fresh spinach and crumbled feta cheese, then mix thoroughly.
- Spoon this filling into six mushroom caps.
Sausage & Herb Filling
- To the second portion of the base mixture, incorporate cooked and crumbled Italian sausage, fresh parsley, and fresh thyme, then combine well.
- Fill another six mushroom caps with this mixture.
Cream Cheese & Jalapeño Filling
- To the final portion of the base mixture, add softened cream cheese, minced jalapeño, and shredded cheddar cheese, then mix until uniform.
- Stuff the remaining six mushroom caps with this creamy filling.
Baking
- Arrange all stuffed mushrooms on the prepared baking sheet and bake for 18-20 minutes, or until the mushrooms are tender and the filling is golden brown.
- Serve the stuffed mushrooms warm as an appetizer or side dish.
Notes
For extra flavor, you can brush the mushroom caps with a little olive oil before stuffing. The jalapeño seeds can be left in for more heat if desired.
