Method
 

Preparation
  1. Whisk together flour, baking powder, and salt in a medium bowl; set aside.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
  5. Divide the dough in half, flatten each half into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
Baking
  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. On a lightly floured surface, roll out one disk of chilled dough to about 1/4-inch thickness.
  3. Cut out desired shapes using Christmas-themed cookie cutters and place them on the prepared baking sheets.
  4. Bake for 8-12 minutes, or until the edges are lightly golden; let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Decorating
  1. While the cookies cool, prepare the icing by whisking together powdered sugar, milk, and optional almond extract.
  2. Add food coloring if desired to achieve festive colors.
  3. Once cookies are completely cool, decorate them with the prepared icing.
