Preparation
- Preheat your grill to medium-high heat (about 375-400°F).
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Chop and Marinade
- Chop all vegetables into roughly 1-inch pieces to ensure even cooking.
- In a large bowl, whisk together all marinade ingredients.
- Add the chopped vegetables to the bowl and toss to coat evenly.
Assemble and Grill
- Thread the marinated vegetables onto the skewers, alternating for color and even cooking.
- Place the kabobs on the preheated grill and cook for 8-12 minutes, turning occasionally, until vegetables are tender-crisp and lightly charred.
Serve
- Remove kabobs from the grill and serve immediately as a side dish or a light main course.
Notes
For extra flavor, try adding different herbs to the marinade such as thyme or rosemary. These kabobs can also be cooked in the oven at 400°F (200°C) for 20-25 minutes, or until tender.
