Preparation
- Preheat your oven to 400°F (200°C) and prepare your carrots by scrubbing them clean and trimming the ends.
- Cut larger carrots into uniform pieces to ensure even cooking, then place all the prepared carrots in a large bowl.
Roasting
- Drizzle the olive oil over the carrots and toss to coat them evenly, then sprinkle with salt, black pepper, and garlic powder, tossing again to distribute the seasonings.
- Spread the seasoned carrots in a single layer on one or two large baking sheets, making sure not to overcrowd them, which allows for proper roasting and browning.
- Roast for 35-45 minutes, flipping them halfway through, until they are tender and slightly caramelized.
Serving
- Carefully remove the roasted carrots from the oven and serve immediately as a delicious side dish.
Notes
For extra flavor, try adding a sprinkle of fresh herbs like thyme or rosemary after roasting. Adjust seasoning to taste, and for a sweeter touch, a drizzle of maple syrup or honey can be added before roasting.
