Ingredients

Main Ingredients
  • 5 pounds carrots
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder

Equipment

  • large bowl
  • baking sheets
  • oven

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare your carrots by scrubbing them clean and trimming the ends.
  2. Cut larger carrots into uniform pieces to ensure even cooking, then place all the prepared carrots in a large bowl.
Roasting
  1. Drizzle the olive oil over the carrots and toss to coat them evenly, then sprinkle with salt, black pepper, and garlic powder, tossing again to distribute the seasonings.
  2. Spread the seasoned carrots in a single layer on one or two large baking sheets, making sure not to overcrowd them, which allows for proper roasting and browning.
  3. Roast for 35-45 minutes, flipping them halfway through, until they are tender and slightly caramelized.
Serving
  1. Carefully remove the roasted carrots from the oven and serve immediately as a delicious side dish.

Notes

For extra flavor, try adding a sprinkle of fresh herbs like thyme or rosemary after roasting. Adjust seasoning to taste, and for a sweeter touch, a drizzle of maple syrup or honey can be added before roasting.
