Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, combine the canned pumpkin, eggs, and vegetable oil, then mix until well blended.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined to avoid overmixing.
Baking
- Pour the batter evenly into the prepared baking pan.
- Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the pumpkin bars cool completely in the pan on a wire rack before frosting.
Frosting
- In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar and vanilla extract, beating until the frosting is light and fluffy.
- Once the pumpkin bars are completely cool, spread the cream cheese frosting evenly over the top and cut into squares.
Notes
For extra flavor, you can add a pinch of ground cloves or ginger to the dry ingredients. Ensure the pumpkin bars are completely cool before frosting to prevent the frosting from melting.
