Preparation
- In a small bowl, whisk the eggs with a pinch of salt and pepper; set aside.
- In another small bowl, mix soy sauce and sesame oil; set aside.
- Prepare all vegetables by mincing garlic, grating ginger, and slicing green onions.
Cooking
- Heat vegetable oil in a large wok or frying pan over medium-high heat. Add garlic and ginger, stir-frying for about 30 seconds until fragrant.
- Pour in the whisked eggs and scramble quickly until just cooked, then break them into small pieces and push to one side of the wok.
- Add the day-old rice and frozen peas and carrots to the wok, breaking up any clumps of rice.
- Stir-fry for 3-5 minutes, ensuring all ingredients are well combined and heated through.
- Pour the soy sauce mixture over the rice, stirring constantly to coat everything evenly.
- Add sliced green onions and stir-fry for another minute, then serve immediately.
Notes
For best results, use day-old rice. This helps prevent the fried rice from becoming mushy. Adjust spice levels to your preference.
