  • 3 cups day-old cooked rice
  • 2 large eggs
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 cup frozen peas and carrots
  • 2 green onions, sliced

Method
 

Preparation
  1. In a small bowl, whisk the eggs with a pinch of salt and pepper; set aside.
  2. In another small bowl, mix soy sauce and sesame oil; set aside.
  3. Prepare all vegetables by mincing garlic, grating ginger, and slicing green onions.
Cooking
  1. Heat vegetable oil in a large wok or frying pan over medium-high heat. Add garlic and ginger, stir-frying for about 30 seconds until fragrant.
  2. Pour in the whisked eggs and scramble quickly until just cooked, then break them into small pieces and push to one side of the wok.
  3. Add the day-old rice and frozen peas and carrots to the wok, breaking up any clumps of rice.
  4. Stir-fry for 3-5 minutes, ensuring all ingredients are well combined and heated through.
  5. Pour the soy sauce mixture over the rice, stirring constantly to coat everything evenly.
  6. Add sliced green onions and stir-fry for another minute, then serve immediately.

Notes

For best results, use day-old rice. This helps prevent the fried rice from becoming mushy. Adjust spice levels to your preference.
