Preparation
- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.

Make the Sauce

Assemble and Bake
- Layer half of the sliced potatoes in the prepared baking dish, overlapping them slightly.
- Pour half of the cheese sauce evenly over the potatoes, then sprinkle with half of the remaining cheddar cheese.
- Repeat with the remaining potatoes, sauce, and cheese, ensuring an even distribution.
- Cover the baking dish with aluminum foil and bake for 45 minutes.
- Remove the foil and continue baking for 15-20 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
Serve
- Let the scalloped potatoes rest for 10 minutes before serving to allow the sauce to set.

For best results, use a mandoline slicer to ensure uniform potato slices. This helps them cook evenly. You can also experiment with different types of cheese, such as Gruyere or a blend of your favorites, to customize the flavor. Ensure the sauce is thick enough to coat the potatoes well for a rich, creamy texture.
