Preparation
- Cut chicken thighs into 1-inch pieces. In a bowl, whisk together soy sauce, mirin, sake, sugar, grated ginger, and minced garlic to create the teriyaki marinade.
Marinating and Cooking
- Add the chicken pieces to the marinade, ensuring they are well coated. Marinate for at least 30 minutes in the refrigerator, or longer for more flavor.
- Heat a large skillet or wok over medium-high heat. Add a little oil if needed, then add the marinated chicken and cook until browned on all sides, about 5-7 minutes.
- Pour the remaining marinade into the skillet with the chicken. In a small bowl, whisk together cornstarch and water to create a slurry. Add the slurry to the skillet, stirring constantly until the sauce thickens.
Finishing Touches
- Once the sauce has thickened and coats the chicken, remove from heat. Garnish with sesame seeds and sliced green onions before serving.
Notes
For extra flavor, you can grill or broil the chicken after marinating for a smoky char before adding the sauce. Serve with steamed rice and your favorite vegetables.
