Method
 

Preparation
  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Add minced garlic and sliced zucchini to the pot. Cook for 5-7 minutes, stirring occasionally, until the zucchini starts to soften.
  3. Pour in the vegetable broth. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until zucchini is very tender.
Finishing
  1. Carefully transfer the soup to a blender and blend until smooth and creamy. Alternatively, use an immersion blender directly in the pot.
  2. Return the blended soup to the pot (if you used a regular blender). Stir in the heavy cream, and season with salt and pepper to taste.

Notes

For an extra touch, garnish with fresh herbs like dill or parsley, or a swirl of crème fraîche. You can also roast the zucchini first for a deeper flavor profile.
